Parmesan, Gouda, Farmhouse Cheddar, and many others. Your kit includes a dairy thermometer, all the cultures, rennet, muslin butter cloth, shaping mold… anything that’s required except the milk. Hard cheeses achieve their distinct flavors with aging, so patience will reward you with great cheese. Aging Cheese should be coated with Red Cheese Wax to prevent mold from ruining your product. Wax is sold separately.
